                    • I bought some BBQ grill mats to stop to much crud and crap getting on the grill. I have to say I'm impressed by them.

                      On Sunday I made a burger that was structurally poor. One bite and the bastard fell apart. I'm going to flatten the buggers even more next time before grilling them.

                      The turgid brown stuff in the middle are my homemade caramelised onions.

                      You can't make an omelette without breaking eggs; every chef will tell you this.

                            • It's a habit I've always used. Besides, proper burgers shouldn't be lean mince anyway. You're looking at 10-20% fat content for a good burger.
